I like to compose, play, and record using the Yamaha Clavinova CVP 505 or Clavinova CVP509. With one touch record to either MIDI or USB as a WAV file. I can record up to 16 tracks internally including mastering, quantizing, and full on DSP processing with the touch of two buttons. I recorded most of these in ten minutes or less.
