Analogous to the ageing process inherent with 100% agave tequila, at first I may come off 'blanco'or 'plata', the bold flavor of the distilled agave presenting a harsher, more sarcastic and cynical front... with time, I resemble reposado and añejo... smoother, subtler, and more complex. As with other spirits aged in casks, I take on the flavors of my environment, adapting and assimilating... all the while, the harshness of the alcohol mellows, allowing my individuality to remain, leaving a lasting impression.
